An Easy, Mostly Raw Dinner

When I was eating 100% raw foods, people would often ask me what on earth we ate for dinner, and how I fed my kids while eating raw myself, so I took some photos of typical meals that our family enjoys.

This meal includes fresh peaches, grapes, cherries, tomatoes, cauliflower, zucchini, and celery with peanut butter and raisins; raw cashews, dried figs, apricots, and currants, and four kinds of nut-based "snack balls" as we refer to them. The balls are variations on recipes for Victoria Boutenko's raw candy.

These days, I'm eating more flexibly, but we still like this type of meal. My kids love having all the variety and options, and I love that not only is everything healthy and fresh, it's a super easy meal to make. These foods are naturally delicious and loaded with vitamins; we don't have to do much to them besides slice and arrange them on plates!

Basically, whenever I'm making this dish I use whatever vegetables and fruits we have that can be enjoyed fresh, and add some cheese, sliced avocado, or tofu. I like to include thinly sliced zucchini or cucumber to take the place of crackers or bread, and either spinach or basil for a leafy green. I often serve this with a simple dip of balsamic vinegar & olive oil, my homemade hummus, or this raw sprouted sunflower seed dip.
