I love this sauce with zucchini noodles (find out how to make them here!) but it will work on anything. It's thick and hearty, and really delicious.
Place everything in the blender:
1 ripe tomato
1/2 red pepper, seeds removed
1/2 c sundried tomatoes in oil
1 small clove garlic
1 t dried basil
1 t dried oregano
1/4 t salt
2 Tb olive oil
dash pepper
Since this is raw, it's best to start with a small amount of garlic, even if you really love garlic; it will overpower the other flavors if you overdo it. Fresh herbs can definitely be used instead of dried; try increasing the herbs a bit if you're using them fresh.
Enjoy! |

ReplyI haven't see zucchini noodles before. Would you do it with meatballs or just plain?
ReplyHowever you like it would work! I love meatballs, but haven't had this sauce with them.

Replyohhh i'm going to pin that, looks delish!
ReplyYou can also peel the zucchini first, so it doesn't have the green tinge, if you think that will help your kids like them.
ReplyLooks GREAT!! My new favorite "noodles" is spaghetti squash! :)

It looks nice but do your kids like it? I think it would be a bit rich for mine.
ReplyThanks for linking to The sunday showcase
My kids will eat anything if you give them shredded cheese to sprinkle on top ;)
ReplyI admit this is not a kid favorite around here, and our kids don't go for rich foods like Nik & I do, but my 7 year old loves this dish if it has chunks of sundried tomatoes in it.
This is the best! I had a humongous plate of zucchini pasta with your marinara this evening... Nom nom nom :)
ReplyOh that's awesome! I'm so glad you liked it.
